Falafel with Black Rice and Goat Cheese
When I was a young college sophomore, I tried vegetarianism for about a year. Every day, for lunch, I made a falafel sandwich in my dorm community kitchen: A fried falafel patty, tomatoes, mustard, and white bread. It was delicious! So, falafel will always have a special place in my heart. Moving on from the sandwich, here I make falafel balls, and pair it with this interesting rice.

goat cheese to taste. It gives it a nice bite and creaminess.
Amaranth with Mushrooms, Spinach and Almonds
Amaranth is a wonderful grain, very filling, and full of protein, vitamins and minerals. The first time I tried it, I didn’t like the taste, but it has grown on me, and I like to experiment with it. Lots of salt and pepper in this one.

Potato with Eggs and Meat
For my meat and potatoes crowd - I love a nice skillet-fried potato with my eggs. I’m not a big pork fan, so I threw in some ground beef. Don’t forget the pepper :)
Eggs travel well. They were scrambled, fridged, and warmed up the next day,

Verdict? Thumbs up to the potato and falafel bowls! I believe I prefer a plain amaranth bowl. Next time, I’ll take it plain, with a side of raw veggies.
